Ways To Consume Bamboo Rice For Diabetes

1. Bamboo Rice Kheer 

The preparation time is one hour. The following is a list of the ingredients you’ll need: 

  • For two persons, 68g of bamboo rice 
  • 4 cups of regular milk/coconut milk 
  • Artificial sweetener: Your choice  
  • 1 cup condensed milk 
  • One tablespoon ghee 
  • 10-12 almonds, cashews, resins, and other nuts 

Step 1: Wash the bamboo rice and soak it in water for around three hours. Drain the water after three hours and boil the rice for three whistles with three cups of coconut milk.  

Step 2: Meanwhile, heat ghee in any pan and start dry roasting the cashews, almonds, resins. 

Step 3: After the rice is done and the pressure has reduced, add another cup of milk and continue to simmer on medium heat. As you do this, keep churning the kheer with the wooden spatula.  

Step 4: Add the cardamom powder when the rice is soft. Add the half cup of condensed milk and sugar to taste at this point. 

Step 5: Finally, throw in the dry fruit mixture and thoroughly combine everything. And your mouth-watering feast is ready! 

2. Bamboo Rice Dosa 

The preparation time for this meal is 4 hours. The following is a list of the ingredients you’ll need: 

  • 3 cups of bamboo rice 
  • 1 cup of white rice 
  • Two tablespoons of chana dal 
  • 1 cup urad dal 
  • Two tablespoons poha 

Step 1: Before you begin, soak the rice and all of the pulses mentioned above for 8 hours. Then, all of the ingredients should be washed and ground together in a mixer. 

Step 2: The ground batter must now ferment for a further 8 hours. Thus, fermentation might take as little as 6 hours during the summer. 

Step 3: Light the gas and cook the pan after your batter has fully fermented. To create a dosa, pour the batter in the proper proportions and roll gently in a circular motion over. 

Step 4: Place the oil at the dosa’s circular edge to give it a crispier bite. Oil also makes removing the dosa from the pan much more accessible.
